Ingredients Serves 4

  • Dairy & Alternatives
  • 1 tbsp butter
  • Oils, Sauces & Condiments
  • 1 tbsp olive oil
  • 1 tsp cumin seeds
  • 1 tsp black pepper
  • Vegetables & Fresh Produce
  • 2 pieces zucchinis
  • 1/2 cup red onion
  • 1 tbsp lemon juice
  • 1/4 cup fresh coriander

Method

Step 1

Peel and slice zucchini and onion. Chop coriander

Step 2

Heat butter and olive oil in a nonstick skillet over medium heat.

Step 3

Sautรฉ cumin seeds to brown.

Step 4

Add zucchini and onion and sprinkle with black pepper. Stir a few times to mix.

Step 5

Cover and cook for approximately 5 minutes to medium tenderness, stirring a few times.

Step 6

Add lemon juice and chopped coriander. Mix, cook another minute and serve.
