Ingredients Serves 4

  • Meat, Poultry & Seafood
  • 2 pieces Chicken breast (sliced)
  • Vegetables & Fresh Produce
  • 250 grams Cherry tomatoes, halved
  • 3 pieces Radish (sliced)
  • 1 pieces Cucumber (sliced)
  • Oils, Sauces & Condiments
  • 1 cup Caramelised balsamic vinegar (or 1 cup of balsamic vinegar with brown sugar to taste)

Method

Step 1

In a bowl mix the chicken breast and balsamic vinegar, marinate for 1 hour.

Step 2

In a frying pan over medium heat, cook the chicken for 4 – 5 minutes on each side. Remove from heat and cool.

Step 3

Gently toss chicken, avocado, tomatoes and radishes in a bowl.

Step 4

Drizzle with balsamic and serve.
