Mix garlic, lamb fillets, shallots, olive oil, herbs and lemon zest. Marinade in fridge for a minimum of 2 hours.
Preheat the oven to 200ยบc.
Heat frying pan until hot. Cook fillets in pan until brown.
Transfer meat and marinade into ovenproof dish and cook in oven for 35 minutes.
Remove lamb from oven, transfer to warm dish and rest for 10 minutes.
Deglaze oven pan with white wine and bring to boil. Strain if required and pour over lamb.
Serve with mashed potato/sweet potato, beans and carrots.
