Ingredients Serves 4

  • Vegetables & Fresh Produce
  • 2 pieces Green chilies, finely chopped
  • 1/4 cup Corn, grated
  • 1 tbsp Coriander, finely chopped
  • Dairy & Alternatives
  • 1/4 cup Greek yogurt
  • 1/4 cup Cottage cheese
  • Nuts & Seeds
  • 1 tsp Mustard seeds
  • Oils, Sauces & Condiments
  • 2 tbsp Vegetable oil
  • Bakery / Other
  • 1/4 cup Semolina
  • 1/8 tsp Salt
  • 1 tbsp Ghee
  • 1/4 cup Water

Method

Step 1

In a saucepan, heat the vegetable oil and add mustard seeds. When the seeds splutter, add semolina, chilies and salt. Roast until the semolina grows slightly brown.

Step 2

Remove from heat and let cool.

Step 3

Mix yogurt with water and blend until smooth.

Step 4

Add corn, paneer, cilantro and yogurt to the cooled semolina mixture. Mix well and set aside for 10 minutes.

Step 5

Grease on idli mould with ghee (clarified butter) and spoon small portions of batter into mould. Steam and cook idlis for 10 minutes. Remove from the mold.

Step 6

Sprinkle with finely chopped coriander and serve with coriander chutney.
