This BBQ Chicken & Corn Salad brings together juicy spiced chicken with charred corn and fresh greens.
A perfect balance of warm, bold flavours and crisp freshness in every satisfying bite!

Drizzle or coat corn with oil. Cook corn over grill or pan until charred.
Add spice mix and oil to zip lock bag. Marinate chicken in the zip lock bag. Leave for 30 minutes or overnight in the fridge.
Cook chicken on the fry pan or grill. Cook then cut into thick slices. Keep warm.
Assemble potato, corn, spinach and chicken on plate.
Top with drizzle of chipotle mayonnaise and or lime juice.
