Ingredients Serves 4

  • Meat, Poultry & Seafood
  • 12 pieces Prawns, peeled and deveined
  • Vegetables & Fresh Produce
  • 1 pieces Medium capsicum
  • 1 pieces Medium Bok Choy
  • 1 cup Green beans
  • Dairy & Alternatives
  • 400 ml Coconut milk
  • Oils, Sauces & Condiments
  • 3 tbsp Laksa paste (salt reduced)
  • Grains, Pasta & Legumes
  • 300 grams Vermicelli Noodles

Method

Step 1

Soak Vermicelli noodles in hot water until soft, drain and set aside.

Step 2

In a saucepan on medium, heat the Laksa paste until fragrant and add the coconut milk and 1 cup of water. Bring to the boil.

Step 3

Add in the boy choy, capsicum and green beans to saucepan.

Step 4

Add in prawns and noodles. Reduce to a simmer for 3 to 5 minutes. Serve warm.
