Ingredients Serves 4

  • Meat, Poultry & Seafood
  • 250 grams chicken breast, sliced into smaller pieces
  • Oils, Sauces & Condiments
  • 1.5 tbsp tandoori paste
  • 1/2 tsp tandoori paste
  • 1 pinch ground cumin
  • Vegetables & Fresh Produce
  • 1 pieces cucumber (sliced)
  • 1 pieces red onion (diced)
  • 2 pieces stalks of celery
  • 1/2 pieces mango (diced)
  • 3 tbsp mint
  • 1 Clove garlic (crushed)
  • 500 grams lettuce, shredded
  • Grains, Pasta & Legumes
  • 1 tbsp unsalted peanuts
  • Dairy & Alternatives
  • 100 grams greek yoghurt

Method

Step 1

Combine the chicken and tandoori paste in a bowl

Step 2

Cook chicken in a frying pan over medium heat, until browned all over

Step 3

Combine lettuce, cucumber, onion, mango and peanuts in a bowl

Step 4

Combine dressing ingredients. Top salad with chicken and drizzle with dressing to serve
