Hearty and vibrant, this spiced chickpea salad is packed with warm spices, fresh herbs and zesty dressing for a nourishing dish thatโs as satisfying as it is flavourful.
Combine the dressing ingredients and shake or stir together to combine. Set aside for 20 minutes. Add chickpeas in a large bowl with the spices and toss to coat.
Heat 2 tablespoon olive oil in a fry pan over high heat and fry the chickpeas for a couple of minutes until they are golden and crispy. Transfer into bowl and cool slightly.
Combine the all the salad Ingredients in a bowl. Drizzle with a bit of Dressing and toss. Transfer to serving bowl. Top salad with chickpeas (warm or at room temperature).
Drizzle with more dressing. Toss gently and serve!
