Ingredients Serves 4

  • Meat, Poultry & Seafood
  • 300 grams White fish fillets
  • 1 pieces Reduced salt stock cube
  • Vegetables & Fresh Produce
  • 2 pieces Small eggplants, diced
  • 1 pieces Small onion, finely diced
  • 5 Clove Garlic, minced
  • 1 pieces Small fresh red chilli
  • Oils, Sauces & Condiments
  • 1 tbsp Tomato paste

Method

Step 1

Add the eggplant to a pot of water and bring to the boil. Cook for 10 minutes. Drain and set aside.

Step 2

Place all ingredients except the stock cube into a large pot and cover with water, and simmer for 45 minutes.

Step 3

Add the stock cube to the pot, continue to simmer until soup has thickened to a desired consistency.

Step 4

Serve warm with a side of boiled rice.
