Ingredients Serves 4

  • Vegetables & Fresh Produce
  • 1 pieces Onion
  • 0.5 pieces Celery, thinly sliced
  • 0.5 pieces Green capsicum
  • 2 tbsp Sundried tomatoes, chopped
  • Oils, Sauces & Condiments
  • 1 tbsp Olive oil
  • 1 tbsp Parsley flakes
  • 1 tsp Italian herbs
  • Meat, Poultry & Seafood
  • 425 grams Tuna, canned in spring water drained
  • Dairy & Alternatives
  • 0.5 cup Sour cream (light)
  • Grains, Pasta & Legumes
  • 250 grams Fettuccine

Method

Step 1

Heat oil in frying pan; add onion, capsicum and celery. Cook 1 – 2 minutes until onion is soft.

Step 2

Add sundried tomatoes, Italian herbs and parsley then cook a further 2 minutes.

Step 3

Add tuna and cook until mixture is heated through.

Step 4

Remove from heat; stir sour cream through sauce.

Step 5

Serve sauce with fettuccine cooked as per packet instructions.
