Ingredients Serves 2

  • Vegetables & Fresh Produce
  • 100 grams Zucchini (grated)
  • 1 pieces Carrot (grated)
  • Meat, Poultry & Seafood
  • 300 grams Chicken mince
  • Oils, Sauces & Condiments
  • 1 tbsp Olive oil
  • 2 tsp Golden Spice blend (or favourite spice)

Method

Step 1

Preheat oven to 180ยฐC

Step 2

Place all ingredients into a mixing bowl.

Stir well until evenly combined.

Step 3

Spoon mixture into 2 ร— 1-cup silicone moulds or an oven-safe dish.

Step 4

Bake for 30 mins, or until firm.

Step 5

Enjoy warm or cool completely and freeze.

Top Tips:

Try something new and use an egg ring to make this into a burger patty!

You can pair with half a cup of rice, a cup of legumes or aย bread roll if living with diabetes.

If prescribed, remember your phosphate binder with this recipe.
