Bring a small saucepan of water to the boil. Add the broccoli and boil for 5 minutes and then drain.
Crack the eggs into a bowl and beat. Mix through the flour.
Add the broccoli and onion to the mixture and mix until well combined.
Heat 1/2 a tablespoon of the oil in a fry pan over medium heat and pour in 1/4 of the broccoli mixture and fry until browned on both sides.
Repeat with the remaining batter.
Serve fritters hot with the mixed leaves dressed in a salad dressing.
