Soak long rice until it is soft enough to cut
Cook the chicken breast in olive oil on medium heat until tender.
Add the garlic, ginger and onion. Cook for a furth 2 minutes.
Add the long rice, 1 cup of water and the soy sauce. Put the lid and cook for 3 minutes.
Stir and add the rest of the liquid until the long rice thickens.
Add in the vegetables and mix to combine. Cook for another 3 minutes.
Serve warm!
