These spiced beef koftas are made with lean mince, Moroccan seasoning, herbs, and a touch of chilli, then grilled to perfection on skewers.

Served with couscous or basmati rice and an optional minty crème fraîche dressing, they’re a delicious and easy meal option that’s kidney-friendly and ready in just 30 minutes.

Ingredients Serves 10

  • Vegetables & Fresh Produce
  • 0.5 pieces Red onion, finely chopped
  • 1 Clove Garlic, crushed
  • 2 tbsp Coriander, chopped
  • 2 tbsp Lemon, juice
  • 1 tbsp Mint, chopped
  • Meat, Poultry & Seafood
  • 500 grams Lean beef mince
  • 1 pieces Egg
  • Oils, Sauces & Condiments
  • 1 tbsp Moroccan seasoning mix
  • 0.5 tbsp Chilli flakes
  • 0.25 cup Dried breadcrumbs
  • 1 pieces Olive oil/cooking spray
  • Grains, Pasta & Legumes
  • 1 pieces Couscous (to serve)

  • 0.25 cup Creme fraiche

  • 10 pieces Bamboo skewers

Method

Step 1

Soak 10 long bamboo skewers in water for 30 minutes.

Step 2

Combine mince, onion, garlic, seasoning mix, chilli flakes, coriander, egg, and breadcrumbs. With clean hands mix well to combine.

Step 3

Divide mixture in ten and press mince mixture onto skewers to form a long sausage shape. Spray evenly with cooking spray.

Step 4

Preheat a BBQ plate or char-grill plate over medium high heat. Cook skewers for 8-10 minutes turning every 3-4 minutes.

Step 5

Serve skewers with Couscous salad or cooked basmati rice and dollop with creamy dressing.

Step 6

Creamy Dressing: Combine crème fraiche, lemon juice and mint and mix well.
