Ingredients Serves 2

  • Vegetables & Fresh Produce
  • 300 grams Zucchini (grated)
  • 200 grams Capsicum (diced)
  • Meat, Poultry & Seafood
  • 1 pieces Egg
  • Oils, Sauces & Condiments
  • 1 tbsp Olive oil
  • 2 tsp Green Herb Blend (or favourite herbs)

Method

Step 1

Preheat oven to 180ยฐC

Step 2

Gently fry off the zucchini and capsicum with a dash of olive oil. Set aside and allow to cool a little.

Step 3

Place all ingredients into a mixing bowl.

Stir well until evenly combined.

Step 4

Spoon mixture into 2 ร— 1-cup silicone moulds or an oven-safe dish.

Step 5

Bake for 30 minutes or until firm.

Step 6

Enjoy warm or cool completely and freeze.

Top Tips:

Pair with half a cup of rice or a cup of legumes for a satisfying meal!
