Combine chicken, ginger, five spice and sambal oelek in a bowl. Cover, refrigerate 30 minutes.
Add noodles to large pan of boiling water, boil, uncovered, until just tender, drain, rinse under cold water, drain.
Heat half the oil in wok or large pan, stir-fry chicken until well browned
Heat remaining oil in wok, add onion, capsicum, carrot, water, cook, stiring well.
Add noodles, mix well.
