Ingredients Serves 4

  • Vegetables & Fresh Produce
  • 2 bunch Asparagus (washed and ends removed)
  • 4 cup Salt reduced vegetable stock
  • 0.5 - 1 tbsp Cayenne pepper
  • Dairy & Alternatives
  • 1/2 cup Thickened cream

Method

Step 1

Cut asparagus in small pieces (about 2- 3 cm) and set them aside.

Step 2

In a large non-stick saucepan, pour in stock and add in asparagus. Bring this to a simmer.

Step 3

Cook for 5 minutes or until asparagus is tender, but still green.

Step 4

Remove saucepan from the heat and puree with a hand blender.

Step 5

Return to a low heat and slowly add the cream, cooking on low until heated through.

Step 6

Season to taste with the cayenne pepper.
