Heat 1 cup of water and the sugar together in a saucepan. Bring to the boil stirring to dissolve the sugar.
Boil for 5 minutes and then let cool completely.
Puree the berries, lime juice and mint leaves and pour into a large bowl.
Add in the sugar syrup and 200mL of water.
Place in a lined loaf tin and put in the freezer.
Remove every 15 minutes for the first hour to stir thoroughly and then let it freeze overnight.
Slice to serve.
