Combine oil, lime juice, fish sauce, garlic, lemongrass paste, brown sugar and chilli sauce in a medium size bowl.
Add chicken and ensure each piece is coated well in the marinade.
Refrigerate for 1 to 2 hours.
Pan fry or grill over medium heat until golden brown.
Serve with the rice and cucumber.
