This colourful pasta salad features al dente spiral pasta mixed with fresh veggies like capsicum, celery, radish, green onion, and kale.

Tossed in a creamy Dijon and mayo dressing with chives, it’s ready in just over 20 minutes.

Perfect as a side dish, and suitable for people with kidney disease.

Ingredients Serves 6

  • Grains, Pasta & Legumes
  • 2.5 cup Spiral pasta, dried
  • Vegetables & Fresh Produce
  • 0.5 pieces Capsicum, finely diced
  • 1 pieces Celery, thinly sliced
  • 3 pieces Red radish, thinly sliced
  • 2 pieces Green onion, sliced
  • 0.5 cup Kale, finely shredded
  • 2 pieces Chives, chopped
  • Oils, Sauces & Condiments
  • 2 tbsp Mayonnaise, whole egg
  • 2 tsp Dijon mustard
  • 1.5 tbsp White wine vinegar

Method

Step 1

Cook pasta according to packet instructions until al dente. Drain and rinse with cold water until cool.

Step 2

Transfer to a salad bowl and stir through capsicum, celery, radish, green onion and kale.

Step 3

Dressing: Combine dressing ingredients and stir through pasta salad until evenly coated. Refrigerate or serve immediately.
