Zingy Tuna Pasta with Apple and Walnuts

A creamy, tangy tuna pasta salad that mixes crisp apple and crunchy walnuts through a light yoghurt dressing. It works warm or chilled, and the flavours develop even more overnight.

Ingredients

  • Pasta (wagon wheel) 1 x 500g packet
  • Tuna in spring water, drained1 x 425g can
  • Green apple, diced small1 apple
  • Walnuts, chopped 1 cup
  • Corn kernels (optional)1 can
  • Red onion, finely diced (optional)1 small onion

For the dressing:

  • Greek yoghurt1 cup
  • Kewpie may1/4 cup
  • Italian dressing2 tablespoons
  • Sesame oil1 tablespoons
  • White wine vinegar1 tablespoon
  • Wasabi (optional)1-2 teaspoon
  • Salt & PepperTo taste

Cooking Instructions

Cook pasta as per packet instructions.

Meanwhile drain tuna, set aside. Mix dressing ingredients in a small jug/ bowl. Dice apple and roughly chop walnuts.

Once pasta is cooked drain well and transfer to a large bowl. Mix dressing through while still warm. Add tuna, walnuts and apple, mix well

Add optional corn and red onion.

Serve warm or refrigerate and eat later, gets better over night!
