Ingredients Serves 4

  • Meat, Poultry & Seafood
  • 300 grams Lean beef strips
  • Oils, Sauces & Condiments
  • 1 tsp Sesame oil
  • 2 tsp Soy sauce, reduced salt
  • Vegetables & Fresh Produce
  • 1 Clove Garlic, minced
  • 1 tsp Ginger, grated
  • 1 pieces Red capsicum, thinly sliced
  • 1 cup Zucchini, thinly sliced
  • 1 pieces Onion, thinly sliced
  • 0.5 cup Spinach

Method

Step 1

Cook noodlesย according to package instructions. Drain and set aside.

Step 2

Prepare beef and vegetables
Heat a non-stick pan or wok over medium heat.
Add oil โ€“ If using add sesame oil, garlic, and ginger; stir-fry for 30 seconds.
Add beef strips and stir-fry until browned and just cooked through (3โ€“4 minutes).
Remove beef from pan and set aside.

Step 3

Stir-fry vegetables
In the same pan, add onion, capsicum, and zucchini.
Stir-fry for 3โ€“4 minutes until tender-crisp.
Add baby spinach last and cook until just wilted.

Step 4

Combine
Return beef to the pan with vegetables.
Add cooked noodles and drizzle with low-salt soy sauce.
Toss gently to combine and heat through.

Top Tips:

Diabetes note: Currently this meal is too low in carbohydrate for a main meal if living with diabetes. However – increase portion size for a person with diabetes.
