A quick, colourful noodle stir-fry with lean beef, tender-crisp veg and a light soy-based sauce. Balanced, satisfying, and easy to customise for kidney-friendly needs.
Cook noodlesย according to package instructions. Drain and set aside.
Prepare beef and vegetables
Heat a non-stick pan or wok over medium heat.
Add oil โ If using add sesame oil, garlic, and ginger; stir-fry for 30 seconds.
Add beef strips and stir-fry until browned and just cooked through (3โ4 minutes).
Remove beef from pan and set aside.
Stir-fry vegetables
In the same pan, add onion, capsicum, and zucchini.
Stir-fry for 3โ4 minutes until tender-crisp.
Add baby spinach last and cook until just wilted.
Combine
Return beef to the pan with vegetables.
Add cooked noodles and drizzle with low-salt soy sauce.
Toss gently to combine and heat through.
