Ingredients

  • Lean beef strips300g
  • Sesame oil1 teaspoon
  • Garlic, minced1 clove
  • Ginger, grated1 teaspoon
  • Red capsicum, thinly sliced1 small capsicum
  • Zucchini, thinly sliced1 cup
  • Onion, thinly sliced1 small onion
  • Spinach1/2 cup
  • Soy sauce, reduced salt2 teaspoons

Cooking Instructions

Cook noodles according to package instructions. Drain and set aside.

Prepare beef and vegetables
Heat a non-stick pan or wok over medium heat.
Add oil – If using add sesame oil, garlic, and ginger; stir-fry for 30 seconds.
Add beef strips and stir-fry until browned and just cooked through (3–4 minutes).
Remove beef from pan and set aside.

Stir-fry vegetables
In the same pan, add onion, capsicum, and zucchini.
Stir-fry for 3–4 minutes until tender-crisp.
Add baby spinach last and cook until just wilted.

Combine
Return beef to the pan with vegetables.
Add cooked noodles and drizzle with low-salt soy sauce.
Toss gently to combine and heat through.

Diabetes note: Currently this meal is too low in carbohydrate for a main meal if living with diabetes. However - increase portion size for a person with diabetes.
