Ingredients Serves 6

  • Vegetables & Fresh Produce
  • 1 tsp Lemon peel, grated
  • 0.25 cup Lemon juice
  • Oils, Sauces & Condiments
  • 3 tbsp Margarine, melted
  • Dairy & Alternatives
  • 1.5 cup Milk
  • Bakery / Other
  • 0.25 cup Self raising flour
  • 0.75 cup Castor sugar
  • 3 pieces Egg, separated

Method

Step 1

Beat egg yolks. Blend in lemon peel, juice, melted margarine and milk.

Step 2

Combine sugar and sifted flour. Add to egg mixture, beating until smooth.

Step 3

In separate bowl, beat egg whites until stiff peaks form. Fold in egg mixture.

Step 4

If using crock-pot: Spoon into crock-pot, cover and cook on high for 2 to 3 hours.

Step 5

If using oven: Spoon into greased, ovenproof bowl sitting in shallow bath of water. Bake in preheated oven at 180ยบc for 40 minutes or until sponge is cooked.
